Our new kitchen now has granite countertops. We have a bow in the wall behind the sink. Should the granite be pushed into the drywall to help minimize the bow or should the wall be "floated out" closer to straight?

I gone through a major loss in my life from losing my husband to a heart attack, to losing my business and home to the financial crunch, just like most Americans. I moved from a 4 bedroom pool home to a 2 bedroom condo with some renovations already done, but I need space to work from home yet make my small kitchen functional. The counters are old and have water damage, the floor is cracked, scuffed and the doom lighting could use updating. Help me get some ideas!
